Here’s a quick, easy, NO bake recipe for homemade granola bars. They were a hit at our house!
Peanut Butter Pretzel Chocolate Chip Granola Bars
1/4 cup unsalted butter or coconut oil
1/4 cup brown sugar
1/4 cup honey
1/4 cup peanut butter
1 teaspoon vanilla
2 cups old fashioned oats
1/2 cup crispy rice cereal
3/4 cup crushed pretzels
1/4 cup mini chocolate chips
Place parchment paper in the bottom of an 8×8 inch pan.
Combine butter, sugar, honey and peanut butter in a large sauce pan. Stir occasionally over medium-low heat until it starts to bubble. Once it starts bubbling, cook for 2 minutes stirring constantly. Remove from heat and stir in the vanilla.
Add oats, cereal and pretzels. Stir well until evenly coated and pour into the prepared pan. Press the mixture evenly into the pan. Sprinkle the mini chocolate chips and press into the mixture with your hands or a spatula.
Pop in the fridge for about 30 minutes, or so until firm. Cut into bars. Store in the fridge and ENJOY!
