It’s time for the first pumpkin recipe of the season! My pumpkin cravings haven’t been as strong this year – maybe Beckham doesn’t like pumpkin as much as I do. These are still yummy though – easy to make, and they taste just like pumpkin pie!
Pumpkin Pie Bars
Recipe adapted from “Some The Wiser”
For the crust:
1 1/3 cup flour
1/2 cup brown sugar
8 Tablespoons butter, softened
3/4 cup chopped pecans (optional)
For the filling:
8 ounces cream cheese, softened
3/4 cup sugar
1/2 cup pumpkin puree
2 eggs, slightly beaten
1 teaspoon cinnamon
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
Preheat the oven to 350.
In a food processor (or use two knives combine the crust ingredients until the mixture is crumbly. Reserve about 2/3 cup of the mixture for the topping. Press the remaining mixture into the bottom of an 8×11 baking dish. Bake for 15 minutes.
While the crust is baking, combine the filling ingredients and mix until smooth. Pour the mixture over the crust and sprinkle with the reserved pie crust. Bake for 30-35 minutes until firm.
