It’s fall in Oklahoma. We enjoyed a very warm, summer-like night under the pergola last night. The girls got their special treat Landon has been saving for almost a month….three very HUMONGOUS lollipops. I love capturing the girls in “real life”. Their sweet faces just make me smile.
Although it still feels like summer, we are in fall mode here. Fall Decor is up, and I’ve been trying some new recipes. I just HAVE to share this one with you…it’s simple and yummy! This recipe is a keeper…I’ll definitely be making these again!
Caramel Apple Cheesecake Bars
(Recipe adapted from Cookies & Cups)
For the crust:
1 cup flour
1/4 cup brown sugar
1/2 cup butter, softened
For the cream cheese filling:
1 8 ounce block of cream cheese, softened
1 teaspoon vanilla
1/4 cup sugar + 1 tablespoon, divided
2 granny smith apples, peeled and diced
1/2 teaspoon cinnamon
For the streusel topping:
1/2 cup light brown sugar
1/2 cup flour
1/3 cup old fashioned oats
1/4 cup butter, softened
Caramel Sauce for drizzling
Preheat oven to 350 and line a 9×9 baking dish with foil.
In a medium bowl combine the crust ingredients with a pastry cutter or two forks until they form coarse crumbs. Press the mixture firmly into the bottom of the pan and bake for 12-15 minutes until lightly browned.
While the crust is baking, prepare the filling and topping. Toss the apples with the cinnamon and tablespoon of sugar. Set aside. Mix the cream cheese, vanilla, egg and 1/4 cup of sugar until combined and smooth. Combine the streusel ingredients with a pastry cutter or forks until evenly mixed.
Remove the crust from the oven, and spread the cream cheese mixture over the top. Layer the diced apples, then top with the streusel.
Bake for 25-30 minutes until the middle is set. When you removed the bars from the oven, drizzle the caramel sauce over the top. Let the bars cool, and then refrigerate before cutting into bars.
