Chewy Ginger Cookies

It has been three weeks since I have baked or cooked (something besides chicken nuggets/pizza rolls) around here.  I was going through withdrawal.  🙂  Sunday night was our small group Christmas party, and I was so excited to bake some cookies!  This recipe is from Joy The Baker –  I love her blog, and have always loved any recipe I’ve tried!

Chewy Ginger Cookies

2 1/4 cup flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 cup unsalted butter, softened
1 cup packed brown sugar
1 large egg
1/4 cup molasses
Turbinado sugar for rolling

Preheat your oven to 350 and line cookie sheets with parchment paper.

Sift the flour, baking soda and salt in a bowl and set aside.  Beat the butter, brown sugar and spices until smooth – about 2 minutes.  Scrape the sides of the bowl down as needed.  Add the egg and molasses and mix on medium until it is light in color – about 2 minutes.  Add the flour mixture on low, mixing only until blended.

Put about 1/2 a cup of turbinado sugar into a bowl.  Roll 2 tablespoons of dough into a ball and then toss in the sugar.  Place on the prepared sheet about 2 inches apart.

Bake the cookies one sheet at a time, on the middle rack.  Bake for 12-14 minutes until there are large cracks on top and the tops feel firm.  Cool on the cookie sheet for about 5 minutes, and then transfer to a wire cooking rack.

Store cookies in an airtight container for up to 4 days.
