Oreo Cheesecake Brownies

I love brownies.  And Oreos.  And cheesecake.  They all make the perfect combination in these little brownie bars!  This is a super quick and easy recipe to whip up!  You can even replace the brownie recipe with your favorite box recipe to make it even easier!  🙂  Hope y’all have a wonderful weekend!

Oreo Cheesecake Brownies

Ingredients:
for the brownies:
8 tablespoon unsalted butter
3/4 cup sugar
1 cup flour
1/2 cup cocoa powder
1/2 teaspoon salt
2 eggs
1/4 cup milk
1 cup coarsely chopped oreos

for the cheesecake topping:
6 ounces of cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla

Preheat the oven to 350 degrees.  Line an 8×8 pan (or similar) with aluminum foil and spray with cooking spray.

In a saucepan, combine the butter and sugar over medium heat.  Bring the mixture to a boil, whisking often.  Boil for 1 minute, then remove and allow the mixture to cool for a few minutes.

In a mixing bowl, combine the flour, cocoa powder and salt.  Wish together.  Add the eggs to the saucepan and whisk quickly to blend.  Whisk in the milk.  Transfer the wet mixture to the mixing bowl and mix until incorporated.  Add the Oreo cookie pieces and fold them in gently.  Spread the batter into the dish.

Combine the cream cheese, powdered sugar and vanilla with an electric mixer.  Beat on medium for a couple minutes until smooth.  Drop the cream cheese mixture over the batter in spoonfuls.  Use a knife to swirl the cream cheese with the brownie batter.  Press a few chunks of Oreo on top!

Bake for 22-25 minutes.  Transfer to a wire rack, and then refrigerate until firm.
